Having ventured through all sorts of gluten free, dairy free, and sugar free baking for over 12 years, I've certainly made avocado chocolate mousse before. But it wasn't until a recent trip to Palm Springs where it was made for me that I realized- I'd been missing a crucial ingredient, and maybe that's why I was never enamored with this dessert. Until now! That crucial ingredient? FAT! Because fat makes everything more delicious, right? What makes this recipe truly satisfying is a good amount of melted coconut oil blended into the mousse. Chill it, and later you have a silky, rich, luxurious mousse. I'm obsessed.
The recipe is incredibly easy. You'll need:
4 ripe avocados
1/2 cup coconut oil, melted
1/3 cup cocoa powder
1/4 cup maple syrup
pinch of salt
Blend all ingredients in a food processor until very smooth, adding more sweetener if needed. Transfer to individual ramekins or glasses, cover, and chill. I highly recommend serving with some strawberries or raspberries.
